Tomato Rice with Fried Egg and Cheese
Ingredients:
- 2 eggs
- 2 tablespoons of grated cheese
- 2 tablespoons of olive oil
- 1 tomato, diced
- 1 clove of garlic, minced
- 1 cup of cooked white rice
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the garlic and tomato and cook for 2-3 minutes, stirring occasionally.
3. Add the cooked rice and season with salt and pepper. Cook for an additional 3-4 minutes, stirring occasionally.
4. Push the rice mixture to the side of the skillet and crack the eggs into the skillet. Cook until the whites are set and the yolks are still runny, about 3-4 minutes.
5. Sprinkle the grated cheese over the eggs and rice.
6. Serve the tomato rice with the fried eggs and cheese. Enjoy!
