Recipe: Crispy Cod with Chinese Chives and Taro

Ingredients:
- 4 pieces of cod fillets
- 1 bunch of Chinese chives
- 2 medium-sized taro, peeled and sliced
- Salt and pepper to taste
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Cooking oil for frying

Instructions:
1. Season the cod fillets with salt and pepper on both sides.
2. Dredge the cod fillets in flour, shaking off any excess.
3. Dip the floured cod fillets in the beaten eggs, ensuring they are coated evenly.
4. Heat cooking oil in a pan over medium-high heat.
5. Fry the cod fillets until golden brown and crispy on both sides. Remove and drain on paper towels.
6. In the same pan, add a little more oil if needed and sauté the sliced taro until golden and crispy. Remove and set aside.
7. Cut the Chinese chives into small pieces and sauté in the pan until wilted.
8. To serve, place the crispy cod fillets on a plate, top with sautéed Chinese chives and crispy taro slices.
