Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 eggs
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 1/2 cup mixed vegetables (peas, carrots, corn)
- Salt and pepper to taste
- Optional: green onions for garnish

Instructions:
1. In a large skillet or wok, heat the vegetable oil over medium-high heat.
2. Add the diced chicken breast to the skillet and cook until browned and cooked through.
3. Push the chicken to one side of the skillet and crack the eggs into the empty side. Scramble the eggs until cooked.
4. Add the cooked rice to the skillet and stir to combine with the chicken and eggs.
5. Pour the soy sauce over the rice mixture and stir well to evenly distribute the sauce.
6. Add the mixed vegetables to the skillet and continue to cook, stirring frequently, until the vegetables are heated through.
7. Season the chicken fried rice with salt and pepper to taste.
8. Remove from heat and garnish with chopped green onions if desired.
9. Serve hot and enjoy!
