Ingredients:
- 1 whole chicken (about 4-5 lbs)
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Rinse the chicken inside and out under cold water and pat dry with paper towels.
3. In a small bowl, combine the minced garlic, olive oil, chopped rosemary, chopped thyme, salt, and pepper.
4. Rub the garlic herb mixture all over the chicken, making sure to coat it evenly.
5. Cut one lemon in half and squeeze the juice all over the chicken. Place the squeezed lemon halves inside the cavity of the chicken.
6. Thinly slice the other lemon and arrange the slices on top of the chicken.
7. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
8. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
9. Serve the lemon herb roasted chicken with your favorite side dishes and enjoy!
