Vegan Fried Rice
Ingredients:
- 2 cups cooked rice
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 2 eggs, lightly beaten
- 1 cup cooked chickpeas
- 2 tablespoons soy sauce
- 2 tablespoons nutritional yeast
- ΒΌ cup water
Instructions:
1. Heat the oil in a large skillet over medium-high heat.
2. Add the garlic and cook for 1 minute.
3. Add the eggs and cook, stirring occasionally, until lightly scrambled.
4. Add the cooked rice, chickpeas, soy sauce, nutritional yeast, and water.
5. Cook, stirring occasionally, until the rice is heated through and the liquid has been absorbed.
6. Serve hot. Enjoy!
