Ingredients:
- 4 eggs
- 2 potatoes, diced
- 1 tomato, diced
- 1 onion, chopped
- 1 cup green beans, chopped
- 1 carrot, diced
- 200g tofu, diced
Instructions:
1. Heat some oil in a large skillet over medium heat.
2. Add the diced potatoes and cook until they start to brown, about 5-7 minutes.
3. Add the chopped onion and carrot, and cook for another 3-4 minutes until they begin to soften.
4. Stir in the diced tofu and green beans, and cook for an additional 5 minutes.
5. Add the diced tomato and cook for another 2-3 minutes until everything is heated through.
6. Create 4 wells in the hash mixture and crack an egg into each well.
7. Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your liking.
8. Season with salt and pepper to taste.
9. Serve hot and enjoy your delicious Veggie Tofu Hash!
