Make Air Fryer Mozzarella Stuffed Potato Skins

Recipe Name: Air Fryer Mozzarella Stuffed Potato Skins

Ingredients:
- 4 large russet potatoes
- 1 cup shredded mozzarella cheese
- 1 small onion, diced
- 1 tomato, diced
- Salt to taste
- Olive oil for brushing

Instructions:

1. Preheat your air fryer to 400°F (200°C).

2. Wash and scrub the potatoes thoroughly. Pierce each potato with a fork a few times and place them in the air fryer basket.

3. Cook the potatoes in the air fryer for about 30-40 minutes, or until they are tender and cooked through.

4. Remove the potatoes from the air fryer and let them cool slightly. Cut each potato in half lengthwise and scoop out the flesh, leaving a thin layer of potato inside the skins.

5. In a bowl, mix the scooped potato flesh with the diced onion, tomato, and a pinch of salt.

6. Stuff each potato skin with the potato mixture and top with shredded mozzarella cheese.

7. Brush the stuffed potato skins with a little olive oil.

8. Place the stuffed potato skins back in the air fryer and cook for an additional 5-7 minutes, or until the cheese is melted and bubbly.

9. Serve the air fryer mozzarella stuffed potato skins hot, garnished with fresh herbs if desired. Enjoy!
