Almond-Crusted Chicken Breasts

Ingredients:

- 2 boneless, skinless chicken breasts
- 1/2 cup defatted almond flour
- 2 eggs
- 2 tablespoons coconut oil
- 1/2 teaspoon salt

Instructions:

1. Preheat oven to 375 degrees F.

2. Place chicken breasts in a shallow dish.

3. In a separate shallow dish, whisk together eggs, salt, and 1 tablespoon of coconut oil.

4. Place almond flour in a third shallow dish.

5. Dip each chicken breast in the egg mixture, then coat with almond flour.

6. Heat remaining tablespoon of coconut oil in a large skillet over medium-high heat.

7. Once the oil is hot, add the chicken breasts and cook for 3-4 minutes per side, or until golden brown.

8. Transfer chicken breasts to a baking sheet and bake for 15-20 minutes, or until chicken is cooked through.

9. Serve and enjoy!
