Ingredients:
- 2 potatoes, peeled and diced
- 1 tomato, chopped
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 2 amla (Indian gooseberry), deseeded and chopped
- 1 cup chickpeas, cooked
- 2 tablespoons maida (all-purpose flour)
- 1/2 cup curd (yogurt)
- Salt, to taste
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 2 tablespoons oil
- Fresh coriander leaves, for garnish
Instructions:
1. Heat oil in a pan and add the chopped onions. Saute until they turn translucent.
2. Add the minced garlic and grated ginger. Cook for a minute until fragrant.
3. Add the chopped tomatoes and cook until they soften.
4. Add the diced potatoes, amla, and cooked chickpeas to the pan. Mix well.
5. In a small bowl, mix the maida with curd to form a smooth paste. Add this paste to the pan and stir to combine.
6. Add salt, turmeric powder, cumin powder, coriander powder, and red chili powder. Mix everything well.
7. Cover the pan and let the curry simmer on low heat until the potatoes are cooked through.
8. Once the potatoes are tender, adjust the seasoning if needed.
9. Garnish with fresh coriander leaves before serving.
