Apple Chicken Fried Rice

Ingredients:

- 2 cups cooked white rice
- 2 cups cooked chicken, diced
- 1 apple, diced
- 2 eggs
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the diced chicken and cook until lightly browned, about 5 minutes.

3. Add the diced apple and cook for an additional 2 minutes.

4. Add the cooked rice and stir to combine.

5. Push the rice mixture to one side of the skillet and add the eggs to the other side. Scramble the eggs until cooked through.

6. Combine the eggs and rice mixture and season with salt and pepper.

7. Cook for an additional 5 minutes, stirring occasionally, until heated through.

8. Serve hot. Enjoy!
