Apple Chicken Lasagna

Ingredients:

- 12 lasagna noodles

- 2 cups diced tomatoes

- 2 cups shredded cheese (cheddar, mozzarella, or a combination)

- 2 apples, peeled, cored, and diced

- 2 cups shredded rotisserie chicken

- 2 tablespoons olive oil

- 1 teaspoon garlic powder

- 1 teaspoon dried oregano

- Salt and pepper, to taste

Instructions:

1. Preheat oven to 375°F.

2. Bring a large pot of salted water to a boil. Add lasagna noodles and cook according to package instructions. Drain and set aside.

3. In a large bowl, combine tomatoes, cheese, apples, chicken, olive oil, garlic powder, oregano, salt, and pepper. Mix until combined.

4. Grease a 9x13 inch baking dish.

5. Layer the lasagna noodles in the bottom of the dish. Top with half of the tomato-chicken mixture.

6. Top with remaining noodles and then the remaining tomato-chicken mixture.

7. Cover with foil and bake for 30 minutes.

8. Remove foil and bake for an additional 15 minutes, or until cheese is melted and bubbly.

9. Let cool for 10 minutes before serving. Enjoy!
