Apple Potato Frittata
Ingredients:
- 2 large potatoes, peeled and diced
- 1 large apple, peeled, cored and diced
- 2 tablespoons olive oil
- 6 large eggs
- 1/2 cup shredded cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large skillet, heat olive oil over medium-high heat. Add potatoes and cook for 8-10 minutes, stirring occasionally, until potatoes are tender and lightly browned.
3. Add apples and cook for an additional 5 minutes, stirring occasionally.
4. In a large bowl, whisk together eggs, cheese, salt and pepper.
5. Add potato and apple mixture to egg mixture and stir to combine.
6. Pour mixture into a greased 9-inch pie plate.
7. Bake for 25-30 minutes, or until center is set and top is golden brown.
8. Let cool for 10 minutes before serving. Enjoy!
