Make Arroz con Huevos y Platanos

Ingredients:
- 1 cup of arroz (rice)
- 2 huevos (eggs)
- 2 platanos (plantains)
- Salt to taste
- Cooking oil
Instructions:
1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
2. In a medium saucepan, bring 2 cups of water to a boil. Add the rice and a pinch of salt. Cover, reduce heat to low, and simmer for 18-20 minutes or until the rice is cooked through.
3. While the rice is cooking, peel the plantains and slice them into rounds.
4. Heat some cooking oil in a skillet over medium heat. Fry the plantain slices until golden brown on both sides. Remove from the skillet and set aside.
5. In the same skillet, fry the eggs to your desired doneness.
6. Once the rice is cooked, fluff it with a fork and season with salt to taste.
7. Serve the arroz con huevos y platanos by placing a portion of rice on a plate, topping it with a fried egg, and arranging the fried plantains on the side.
