Make Arroz con Panceta y Huevos Revueltos
Recipe Name: Arroz con Panceta y Huevos Revueltos
Ingredients:
- 200g Panceta de cerdo, diced
- 1 cup Arroz
- 2 tablespoons aceite vegetal
- 2 tablespoons aceite de oliva
- 1 tablespoon vinagre tinto
- Salt and pepper to taste
- 1 teaspoon azúcar
- 4 huevos
- 2 tablespoons mantequilla
- 1 papa blanca, diced
- 2 cloves Ajo, minced
- 1/2 Cebolla roja, chopped
- 1 Ají amarillo, diced
- 1 Ají limo, diced
- 2 tablespoons culantro, chopped
- 2 tablespoons Perejil, chopped
- 1 Tomate, diced
- 1 Limón, juiced
Instructions:
1. In a large skillet, heat the aceite vegetal over medium heat. Add the diced Panceta de cerdo and cook until crispy. Remove from the skillet and set aside.
2. In the same skillet, add the aceite de oliva and sauté the diced papa blanca until golden brown. Add the minced Ajo, chopped Cebolla roja, diced Ají amarillo, and diced Ají limo. Cook until the vegetables are tender.
3. Add the Arroz to the skillet and stir to combine with the vegetables. Pour in enough water to cover the Arroz, then add the vinagre tinto, salt, pepper, and azúcar. Cover and let it cook until the Arroz is tender.
4. In a separate pan, melt the mantequilla over medium heat. Crack the huevos into the pan and scramble until cooked through. Season with salt and pepper.
5. Once the Arroz is cooked, stir in the chopped culantro, Perejil, diced Tomate, and the crispy Panceta de cerdo. Adjust seasoning if needed.
