Arroz con Pollo
Ingredients:
- 2 boneless, skinless chicken breasts
- 2 cups uncooked white rice
- 2 cups chicken broth
- 1 can diced tomatoes
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees Fahrenheit.
2. In a large baking dish, combine the uncooked rice, chicken broth, diced tomatoes, garlic powder, onion powder, paprika, cumin, oregano, salt, and pepper. Stir to combine.
3. Place the chicken breasts on top of the rice mixture.
4. Cover the baking dish with aluminum foil and bake for 45 minutes.
5. Remove the aluminum foil and continue baking for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.
6. Serve the arroz con pollo hot. Enjoy!
