Make Arroz con Pollo

Recipe Name: Arroz con Pollo

Ingredients:
- 1 lb chicken (pollo), cut into pieces
- 2 cups rice (arroz)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil

Instructions:
1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces and brown on all sides. Remove the chicken and set aside.
2. In the same skillet, add a little more olive oil if needed and sauté the onion, garlic, and bell pepper until softened.
3. Stir in the rice and cook for a few minutes until slightly toasted.
4. Add the diced tomatoes, chicken broth, cumin, paprika, salt, and pepper. Stir well to combine.
5. Return the chicken pieces to the skillet, nestling them into the rice mixture.
6. Cover the skillet and let it simmer on low heat for about 20-25 minutes, or until the rice is cooked and the chicken is tender.
7. Once done, fluff the rice with a fork and serve hot.
