Arroz con Pollo
Ingredients:
- 2 cups of cooked arroz
- 2 cups of cooked, diced chicken
- 1/2 cup of diced carrots
- 1/2 cup of diced potatoes
- 1/4 cup of freshly squeezed lemon juice
- 1 egg, lightly beaten
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large bowl, combine the cooked arroz, chicken, carrots, potatoes, and lemon juice.
3. Pour the mixture into a greased 9x13 inch baking dish.
4. Pour the beaten egg over the top of the mixture and spread it evenly.
5. Bake in preheated oven for 25-30 minutes, or until the top is golden brown and the center is cooked through.
6. Serve hot. Enjoy!
