Arroz con Pollo
Ingredients:
- 2 cups of uncooked long-grain white rice
- 2 tablespoons of olive oil
- 1 pound of boneless, skinless chicken breasts, cut into cubes
- 1/2 cup of diced onion
- 1/2 cup of diced tomato
- 1/2 cup of diced bell pepper
- 2 cloves of garlic, minced
- 1/2 teaspoon of cumin
- 1/2 teaspoon of chili powder
- 1/2 teaspoon of oregano
- 1/2 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/2 cup of chicken broth
- 1/2 cup of water
- 1 large egg, lightly beaten
Instructions:
1. In a large pot over medium-high heat, heat the olive oil.
2. Add the chicken cubes and cook until lightly browned, about 5 minutes.
3. Add the onion, tomato, bell pepper, garlic, cumin, chili powder, oregano, paprika, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
4. Add the rice and stir to combine.
5. Add the chicken broth and water and bring to a boil.
6. Reduce the heat to low, cover, and simmer for 20 minutes.
7. Remove the lid and stir in the egg. Cover and cook for another 5 minutes.
8. Fluff the rice with a fork and serve. Enjoy!
