Arroz con Pollo y Carne
Ingredients:
- 1 cup of rice
- 1 chicken breast, diced
- 1/2 cup of beef, sliced
- 1 can of black beans
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 bell pepper, diced
- 1 tomato, diced
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- Olive oil
- Water
Instructions:
1. In a large pan, heat some olive oil over medium heat.
2. Add the diced chicken breast and sliced beef to the pan. Season with salt, pepper, cumin, and paprika. Cook until browned.
3. Add the chopped onion, minced garlic, bell pepper, and tomato to the pan. Cook until the vegetables are softened.
4. Rinse the rice under cold water until the water runs clear. Add the rice to the pan and stir to combine with the meat and vegetables.
5. Pour in enough water to cover the rice mixture. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
6. Drain and rinse the black beans. Add them to the pan and stir to combine.
7. Adjust seasoning with salt and pepper if needed.
8. Serve the arroz con pollo y carne hot and enjoy!
