Arroz con Pollo y Frijoles Negros
Ingredients:
- 1 cup of arroz (rice)
- 1 can of frijoles negros (black beans), drained and rinsed
- 2 pechugas de pollo (chicken breasts), cut into small pieces
- 2 papas (potatoes), peeled and diced
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- Olive oil
- 2 cups of chicken broth
- Fresh cilantro for garnish
Instructions:
1. In a large skillet, heat some olive oil over medium heat. Add the diced onion, garlic, and red bell pepper. Cook until softened.
2. Add the diced chicken breasts to the skillet and cook until browned on all sides.
3. Stir in the cumin, paprika, salt, and pepper. Cook for another minute to toast the spices.
4. Add the arroz (rice) to the skillet and stir to coat with the spices and chicken.
5. Pour in the chicken broth and bring to a simmer. Cover and cook for about 15 minutes, or until the rice is almost cooked.
6. Add the diced potatoes and black beans to the skillet. Stir to combine.
7. Cover and cook for another 10-15 minutes, or until the potatoes are tender and the rice is fully cooked.
8. Taste and adjust seasoning if needed.
9. Serve the arroz con pollo y frijoles negros hot, garnished with fresh cilantro.
