Arugula and Black Bean Salad
Ingredients:
- 2 cups arugula
- 1 can black beans, drained and rinsed
- 1 cup diced tomatoes
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine the arugula, black beans, and diced tomatoes.
2. In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and pepper.
3. Pour the dressing over the salad and toss to combine.
4. Serve immediately. Enjoy!
