Asian-Style Ground Beef Bowl

Ingredients:

-1 lb ground beef
-1/2 cup spinach, chopped
-1 avocado, diced
-2 tomatoes, diced
-2 cloves garlic, minced
-2 slices whole grain bread, toasted
-1/2 cup penne
-2 burger buns, toasted
-2 tablespoons ketchup
-2 tablespoons soy sauce
-1 cup cooked brown rice
-1/2 onion, diced
-1 tablespoon maple syrup
-2 tablespoons avocado oil
-1/2 cup carrots, diced

Instructions:

1. Heat a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5 minutes.

2. Add the spinach, avocado, tomatoes, garlic, and onion to the skillet. Cook for another 5 minutes, stirring occasionally.

3. Add the ketchup, soy sauce, and maple syrup to the skillet. Stir to combine and cook for another 2 minutes.

4. Meanwhile, cook the penne according to package instructions.

5. To assemble the bowls, divide the cooked brown rice between two bowls. Top each bowl with the ground beef mixture and the cooked penne.

6. Garnish each bowl with the diced carrots and toasted whole grain bread. Serve with the toasted burger buns. Enjoy!
