Asparagus and Egg Stir-Fry
Ingredients:
-1 bunch of asparagus, trimmed and cut into 1-inch pieces
-2 tablespoons of olive oil
-1 small onion, diced
-2 cloves of garlic, minced
-4 large eggs, lightly beaten
-Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the onion and garlic and cook until the onion is softened, about 3 minutes.
3. Add the asparagus and cook until it is tender-crisp, about 5 minutes.
4. Reduce the heat to medium-low and add the eggs. Stir to combine and cook until the eggs are set, about 3 minutes.
5. Season with salt and pepper, to taste. Serve immediately.
