Asparagus and Parmesan Rice

Ingredients:

- 2 cups of cooked white rice

- 1 bunch of asparagus, trimmed and cut into 1-inch pieces
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1/4 cup of grated parmesan cheese
- Salt and pepper to taste

Instructions:

1. Preheat oven to 400 degrees F.

2. Spread the asparagus pieces on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper.

3. Roast the asparagus for 15 minutes, or until tender.

4. In a large skillet, heat the remaining olive oil over medium heat. Add the garlic and cook for 1 minute.

5. Add the cooked rice and asparagus to the skillet and stir to combine.

6. Cook for 5 minutes, stirring occasionally.

7. Remove from heat and stir in the parmesan cheese.

8. Serve hot. Enjoy!
