Recipe Name: Asparagus and Potato Frittata

Ingredients:
- 1 bunch of asparagus, trimmed and cut into 1-inch pieces
- 4 spring onions, thinly sliced
- 4 eggs
- 2 medium potatoes, peeled and diced
- Salt and pepper to taste
- Olive oil

Instructions:
1. Preheat the oven to 350°F (180°C).
2. In a large oven-safe skillet, heat some olive oil over medium heat.
3. Add the diced potatoes and cook until they are golden brown and tender.
4. Add the asparagus and spring onions to the skillet and cook for another 3-4 minutes, until the vegetables are slightly softened.
5. In a bowl, whisk the eggs with salt and pepper.
6. Pour the egg mixture over the vegetables in the skillet, making sure everything is evenly distributed.
7. Cook on the stovetop for a few minutes until the edges start to set.
8. Transfer the skillet to the preheated oven and bake for about 15-20 minutes, or until the frittata is set and slightly golden on top.
9. Remove from the oven and let it cool slightly before slicing and serving.
