Make Aubergine Pecorino Guanciale
Aubergine Pecorino Guanciale
Ingredients:
- 2 large aubergines
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1/2 cup of tomato sauce
- 1/2 cup of grated pecorino cheese
- 4 ounces of guanciale, diced
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. Slice the aubergines into 1/2 inch thick slices and place on a baking sheet.
3. Drizzle the olive oil over the aubergines and season with salt and pepper.
4. Bake for 25 minutes, flipping halfway through.
5. Meanwhile, heat a large skillet over medium heat and add the guanciale. Cook until crisp, about 5 minutes.
6. Add the garlic and cook for another minute.
7. Add the tomato sauce and simmer for 5 minutes.
8. Remove the aubergines from the oven and top with the tomato sauce.
9. Sprinkle the pecorino cheese over the top and bake for another 10 minutes.
10. Serve hot and enjoy!
