Make Autumn Harvest Rice Bowl
Recipe Name: Autumn Harvest Rice Bowl
Ingredients:
- 1 small romanesco, cut into florets
- 1 head of chicory, chopped
- 1 cup diced pumpkin
- 2 cups chopped kale
- 1 cup rice
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
1. Cook the rice according to package instructions and set aside.
2. In a large skillet, heat some olive oil over medium heat.
3. Add the romanesco florets and sauté for 5-7 minutes until they start to brown slightly.
4. Add the chopped chicory and pumpkin to the skillet and cook for another 5 minutes until the vegetables are tender.
5. Stir in the chopped kale and cook for an additional 2-3 minutes until the kale is wilted.
6. Season the vegetables with salt and pepper to taste.
7. Divide the cooked rice into bowls and top with the sautéed vegetables mixture.
