Avocado and Bacon Egg Hash
Ingredients:
- 2 avocados, peeled and diced
- 4 eggs
- 2 potatoes, peeled and diced
- 4 slices of bacon, diced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced potatoes and bacon to the skillet and cook until the potatoes are tender and the bacon is crispy, about 10 minutes.
3. Add the diced avocado and cook for an additional 2 minutes.
4. Crack the eggs into the skillet and season with salt and pepper.
5. Cook until the eggs are cooked through, about 5 minutes.
6. Serve the hash hot with your favorite toppings. Enjoy!
