Avocado and Egg Fried Rice

Ingredients:

- 1 avocado, diced
- 1 cup cooked white rice
- 2 eggs
- 1 small onion, diced
- 1/2 cup shredded cheese
- 1 small zucchini, diced
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the onion and zucchini and cook until softened, about 5 minutes.

3. Add the cooked rice and stir to combine.

4. Push the rice to the sides of the skillet and crack the eggs into the center.

5. Scramble the eggs until cooked through, then stir into the rice.

6. Add the diced avocado and shredded cheese and stir to combine.

7. Season with salt and pepper to taste.

8. Serve hot. Enjoy!
