Avocado and Egg Fried Rice

Ingredients:

-1 avocado, diced
-1 cup cooked white rice
-2 eggs
-1/4 cup diced onion
-1/4 cup shredded cheese
-1/2 cup diced zucchini
-1 tablespoon olive oil
-Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a large skillet over medium heat.

2. Add the diced onion and zucchini and cook until the vegetables are softened, about 5 minutes.

3. Push the vegetables to one side of the skillet and add the eggs. Scramble the eggs until cooked through.

4. Add the cooked rice to the skillet and stir to combine with the vegetables and eggs.

5. Add the diced avocado and shredded cheese and stir to combine.

6. Season with salt and pepper, to taste.

7. Serve warm. Enjoy!
