Avocado and Egg Scramble

Ingredients:

- 2 eggs
- 1/2 avocado, diced
- 1/4 onion, diced
- 1 tablespoon olive oil
- Salt and pepper, to taste

Instructions:

1. Heat the olive oil in a non-stick skillet over medium heat.

2. Add the diced onion and cook until softened, about 3 minutes.

3. Add the diced avocado and cook for an additional minute.

4. Crack the eggs into the skillet and season with salt and pepper.

5. Use a spatula to scramble the eggs until cooked through, about 3 minutes.

6. Serve warm. Enjoy!
