Avocado Chicken Rice Bowl
Ingredients:
-2 chicken breasts
-1 cup of uncooked white rice
-1 avocado, diced
-1 tablespoon of olive oil
-Salt and pepper to taste
Instructions:
1. Preheat oven to 375 degrees Fahrenheit.
2. Place chicken breasts on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.
3. Bake chicken for 25 minutes or until cooked through.
4. Meanwhile, cook rice according to package instructions.
5. Once chicken is cooked and rice is cooked, assemble the bowls. Place cooked rice in the bottom of each bowl and top with diced avocado and cooked chicken.
6. Serve and enjoy!
