Avocado Potato Salad
Ingredients:
- 2 medium potatoes, peeled and diced
- 1 large ripe avocado, peeled and diced
- 1 large tomato, diced
- 2 tablespoons olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions:
1. Place the diced potatoes in a medium saucepan and cover with cold water. Bring to a boil over high heat and cook for 10 minutes or until potatoes are tender. Drain and set aside.
2. In a large bowl, combine the cooked potatoes, avocado, and tomato.
3. In a small bowl, whisk together the olive oil, white wine vinegar, garlic powder, salt, and pepper. Pour the dressing over the potato mixture and gently toss to combine.
4. Serve the salad immediately or chill in the refrigerator for up to 4 hours before serving. Enjoy!
