Make Avocado Spinach Breakfast Sandwich
Recipe Name: Avocado Spinach Breakfast Sandwich
Ingredients:
- 2 eggs
- 4 slices of brown bread
- 1 ripe avocado
- 1 cup of fresh spinach leaves
- 2 tablespoons of mayonnaise
- Salt to taste
- Chilli flakes to taste
- Long thin thread-like mushrooms (optional)
- Sprouts for garnish
Instructions:
1. In a bowl, mash the ripe avocado with a fork and season with a pinch of salt and chilli flakes.
2. Heat a non-stick pan over medium heat and scramble the eggs until cooked to your liking. Season with salt and chilli flakes.
3. Toast the brown bread slices until golden brown.
4. Spread a generous amount of avocado mash on two bread slices.
5. Top each avocado-covered bread slice with a handful of fresh spinach leaves.
6. Place the scrambled eggs on top of the spinach.
7. If using, sauté the long thin thread-like mushrooms in a pan until cooked and add them on top of the eggs.
8. Spread mayonnaise on the remaining two bread slices and place them on top to create sandwiches.
9. Cut the sandwiches in half diagonally and serve with a sprinkle of sprouts on top.
