Bacon and Pickle Aubergine Gratin

Ingredients:

- 4 slices of bacon, diced
- 2 pickles, diced
- 1 large aubergine, sliced
- 2 cups grated cheese
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Preheat oven to 375°F (190°C).

2. Heat olive oil in a large skillet over medium heat. Add bacon and cook until crisp.

3. Add pickles and cook for an additional 2 minutes.

4. Grease a baking dish with olive oil.

5. Layer the aubergine slices in the baking dish, followed by the bacon and pickle mixture.

6. Sprinkle the grated cheese over the top.

7. Bake for 25 minutes or until the cheese is melted and golden brown.

8. Serve warm. Enjoy!
