Bacon and Potato Egg Bake

Ingredients:

- 6 eggs
- 8 slices of bacon
- 2 cups of diced potatoes
- 1/4 cup of shredded cheese
- Salt and pepper to taste

Instructions:

1. Preheat oven to 350°F.

2. Grease an 8x8 inch baking dish.

3. In a large skillet, cook bacon until crisp. Remove from heat and set aside.

4. In the same skillet, cook potatoes until tender.

5. Place cooked potatoes in the baking dish.

6. Crumble cooked bacon over potatoes.

7. In a medium bowl, whisk eggs, salt, and pepper.

8. Pour egg mixture over potatoes and bacon.

9. Sprinkle cheese over the top.

10. Bake in preheated oven for 25-30 minutes or until eggs are set.

11. Let cool for 5 minutes before serving. Enjoy!
