Bacon and Red Pepper Frittata

Ingredients:

- 2 eggs
- 1/4 teaspoon baking soda
- 4 slices of bacon, cooked and crumbled
- 1/4 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 100g butter
- 1 red pepper, diced

Instructions:

1. Preheat oven to 350°F (175°C).

2. In a medium bowl, whisk together eggs, baking soda, salt, and pepper.

3. In a large skillet over medium heat, melt the butter. Add the diced red pepper and cook for 3-4 minutes, stirring occasionally, until softened.

4. Add the crumbled bacon and flour to the skillet and stir to combine.

5. Pour the egg mixture into the skillet and stir to combine.

6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the center is set.

7. Serve warm. Enjoy!
