Bacon, Egg, and Tomato Scramble
Ingredients:
- 4 eggs
- 2 slices of bacon
- 1 tomato, diced
- 1/2 bell pepper, diced
- Salt and pepper, to taste
Instructions:
1. In a medium skillet, cook the bacon over medium heat until it is crispy. Remove the bacon from the pan and set aside.
2. In the same skillet, add the diced tomato and bell pepper. Cook for 3-4 minutes until the vegetables are softened.
3. Crack the eggs into the skillet and stir to combine with the vegetables. Cook until the eggs are cooked through, stirring occasionally.
4. Add the cooked bacon back to the skillet and season with salt and pepper to taste.
5. Serve the scramble warm. Enjoy!
