Bacon, Leek, and Egg Fried Rice
Ingredients:
- 2 eggs
- 2 cups cooked rice
- 2 carrots, diced
- 1 leek, thinly sliced
- 4 slices bacon, diced
- 2 slices of bread, cubed
- 1 onion, diced
Instructions:
1. Heat a large skillet over medium-high heat. Add the bacon and cook until crisp, about 5 minutes.
2. Add the onion, leek, and carrots and cook until softened, about 5 minutes.
3. Add the cooked rice and stir to combine.
4. Push the rice mixture to the side of the pan and add the eggs. Scramble the eggs until cooked through.
5. Add the cubed bread and stir to combine.
6. Cook until the bread is lightly toasted, about 3 minutes.
7. Serve warm. Enjoy!
