Bacon and Potato Frittata

Ingredients:

- 6 slices of bacon
- 2 potatoes, peeled and diced
- 6 eggs
- 1/2 cup of milk
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 2 tablespoons of butter

Instructions:

1. Preheat oven to 375 degrees Fahrenheit.

2. In a large skillet, cook bacon over medium heat until crisp. Remove bacon from the skillet and set aside.

3. In the same skillet, melt butter over medium heat. Add potatoes and cook for about 10 minutes, stirring occasionally, until potatoes are tender.

4. In a large bowl, whisk together eggs, milk, salt, and pepper.

5. Add cooked potatoes and bacon to the egg mixture and stir to combine.

6. Pour the egg mixture into the skillet and cook over medium heat for about 5 minutes, until the edges are set.

7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, until the center is set.

8. Let cool for 5 minutes before serving. Enjoy!
