Recipe Name: Baked Salmon with Roasted Broccoli and Mushrooms

Ingredients:
- 4 salmon fillets
- 2 cups broccoli florets
- 1 cup sliced mushrooms
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 lemon, sliced

Instructions:
1. Preheat the oven to 400°F (200°C).
2. Place the broccoli florets and sliced mushrooms on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss to coat evenly.
3. In a small bowl, mix together the minced garlic, dried thyme, and remaining tablespoon of olive oil.
4. Place the salmon fillets on the baking sheet with the broccoli and mushrooms. Brush the garlic and thyme mixture over the salmon fillets.
5. Place lemon slices on top of each salmon fillet.
6. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
7. Serve the baked salmon with roasted broccoli and mushrooms hot, garnished with additional lemon slices if desired.
