Ingredients:
- 4 tilapia fillets
- 2 cups of fresh spinach
- 1 cup of cherry tomatoes, halved
- 1 cup of green chips (such as kale chips)
- 2 tablespoons of green oil (such as avocado oil)
- 1 celery root, peeled and diced

Instructions:
1. Preheat the oven to 375°F (190°C).
2. Place the tilapia fillets on a baking sheet lined with parchment paper.
3. Drizzle the green oil over the tilapia fillets and season with salt and pepper to taste.
4. Bake the tilapia in the preheated oven for 15-20 minutes, or until cooked through.
5. In a large mixing bowl, combine the fresh spinach, cherry tomatoes, and diced celery root.
