Ingredients:
- 2 ripe bananas, mashed
- 1/2 cup blueberries
- 1/3 cup coconut oil
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Instructions:
1. Preheat the oven to 350°F (180°C) and grease a 9-inch round cake pan with coconut oil.
2. In a mixing bowl, combine the mashed bananas, coconut oil, eggs, and vanilla extract. Mix well.
3. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
5. Gently fold in the blueberries.
6. Pour the batter into the prepared cake pan and spread it out evenly.
