Banana Carrot Muffins
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 teaspoon pure vanilla extract
- 1 cup mashed ripe bananas (about 2 large)
- 1 cup grated carrots
Instructions:
1. Preheat oven to 350°F. Line a 12-cup muffin tin with paper liners.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
3. In a large bowl, whisk together the eggs, oil, sugars, and vanilla until smooth.
4. Add the mashed bananas and grated carrots to the wet ingredients and stir until combined.
5. Add the dry ingredients to the wet ingredients and stir until just combined.
6. Divide the batter evenly among the prepared muffin cups.
7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
8. Let cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
