Brazilian Black Bean and Banana Stew

Ingredients:

- 2 cups of cooked feijão preto (black beans)
- 1 large banana, peeled and sliced
- 1 small onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 2 cups of vegetable broth
- 1 teaspoon of ground cumin
- 1 teaspoon of smoked paprika
- Salt and pepper to taste

Instructions:

1. Heat the olive oil in a large pot over medium heat.

2. Add the onion and garlic and sauté until the onion is softened, about 3 minutes.

3. Add the banana slices and sauté for another 2 minutes.

4. Add the cooked feijão preto, vegetable broth, cumin, and smoked paprika.

5. Bring the stew to a boil, then reduce the heat and simmer for 15 minutes.

6. Season with salt and pepper to taste.

7. Serve the stew hot with your favorite sides. Enjoy!
