Banana Coconut Raisin Muffins
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup butter, softened
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup mashed ripe banana
- 1/2 cup raisins
- 1/2 cup shredded coconut
Instructions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
2. In a medium bowl, sift together the flour, baking soda and salt.
3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the mashed banana.
4. Gradually stir the sifted ingredients into the banana mixture. Fold in the raisins and coconut. Spoon the batter into the prepared muffin cups.
5. Bake for 20 to 25 minutes in the preheated oven, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in the pan for 10 minutes before removing to a wire rack to cool completely.
