Recipe Name: Banana Pancakes

- 2 eggs (Eier)
- 2 ripe bananas (Bananen)
- 2 tablespoons olive oil (Olivenöl)
- 1 cup flour (Mehl)
- 1 teaspoon baking powder (Backpulver)

1. In a mixing bowl, mash the ripe bananas until smooth.
2. Add the eggs and olive oil to the mashed bananas and mix well.
3. Gradually add the flour and baking powder to the banana mixture, stirring until just combined. Do not overmix.
4. Heat a non-stick skillet or griddle over medium heat and lightly grease with olive oil.
5. Pour a ladleful of the pancake batter onto the skillet and cook until bubbles form on the surface, then flip and cook the other side until golden brown.
6. Repeat with the remaining batter, adding more olive oil to the skillet as needed.
7. Serve the banana pancakes warm with your favorite toppings such as maple syrup, fresh fruit, or nuts.
