Recipe: Banana Pancakes
Ingredients:
- 2 eggs
- 2 tbsp sugar
- 1 ripe banana, mashed
- 2 tbsp oil
- 1 tsp baking powder
- 1 cup flour
Instructions:
1. In a mixing bowl, whisk together the eggs and sugar until well combined.
2. Add the mashed banana and oil to the egg mixture, and mix well.
3. Sift in the baking powder and flour, and stir until just combined. Do not overmix.
4. Heat a non-stick pan over medium heat and lightly grease with oil.
5. Pour a ladleful of the pancake batter onto the pan and cook until bubbles form on the surface.
6. Flip the pancake and cook for another minute or until golden brown.
7. Repeat with the remaining batter.
8. Serve the banana pancakes warm with your favorite toppings. Enjoy!
