Make Baobab Lentil Tofu Bowl

Baobab Lentil Tofu Bowl

Ingredients:

-1/2 cup dried lentils
-1/4 cup baobab powder
-1/2 block of extra firm tofu, cubed
-1/2 teaspoon garlic powder
-1/2 teaspoon onion powder
-1/2 teaspoon smoked paprika
-1/4 teaspoon cumin
-1/4 teaspoon chili powder
-1/4 teaspoon sea salt
-1/4 teaspoon black pepper
-1 tablespoon olive oil

Instructions:

1. Preheat oven to 375°F.

2. In a medium bowl, combine the lentils, baobab powder, garlic powder, onion powder, smoked paprika, cumin, chili powder, salt and pepper.

3. Add the cubed tofu to the bowl and toss to coat evenly.

4. Spread the tofu and lentil mixture onto a baking sheet lined with parchment paper.

5. Drizzle the olive oil over the top and toss to coat.

6. Bake for 25 minutes, stirring halfway through.

7. Serve over cooked quinoa or rice and enjoy!
