Barbecue Chicken and Vegetable Soup

Ingredients:

- 4 cups chicken stock
- 1/2 barbecue chicken, shredded
- 2 potatoes, peeled and diced
- 2 carrots, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped

Instructions:

1. In a large pot, heat the chicken stock over medium-high heat.

2. Add the shredded barbecue chicken, potatoes, carrots, onion, garlic, and parsley.

3. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, or until the vegetables are tender.

4. Serve the soup hot, garnished with additional parsley if desired. Enjoy!
